I was feeling pretty crummy last week…. I caught a cold/flu thing that definitely wasn’t fun. Luckily I was feeling good enough to make this recipe I love, and had most of the ingredients on hand! I had some extra red cabbage that needed to be used, so I added quite a bit into the pot. It turned the entire broth a deep (and beautiful!!) purple/red. I love to load up on ginger, garlic and turmeric when I’m sick, so I added quite a bit of those to this. I also put quite a bit of red pepper flakes into it (ok, maybe a little too much…) and that REALLY got my nose unplugged (ie running profusely). (Pro tip: a little bit goes a long way with red pepper flakes…..)
This was sooooo easy to make, as rough chopping only takes a couple of minutes. Chop, dump, turn on the heat and sit down! I only had to get up one more time to turn the temperature down to simmer, then sat back for an hour while it did its thing. *Amazing when you’re sick and exhausted.*
I know many who freeze/thaw this with great luck (although it doesn’t last long enough for that around here!), and this can also be canned if you have the equipment.
