Those dreaded hot Summer days are in full effect here….. ugh. If you’re looking for something cool, crispy and refreshing – look no further! This raw tomato cucumber salad is simple, yet delicious!
This is very fast to make and requires very little work! You can be enjoying this in just minutes 🙂
This recipe is very basic, but can be dressed up in many ways (just use your imagination!). I prefer it plain most times, but it also goes well over a bed of spinach (or your choice of greens) and needs no additional dressing.

My kids love this (they absolutely L-O-V-E tomatoes!) and don’t mind the vinegar in it. (Plus it sneaks in some more garlic!)

Ingredients
- 2 cups chopped tomatoes
- 2 cups chopped cucumber (skins removed)
- 1/2 cup diced white onion
- 1 t salt
- 1 t black pepper
- 1 T minced garlic
- 2 T apple cider vinegar
Instructions
- Combine all ingredients into a medium sized bowl, stir well.
Notes
This can be enjoyed immediately or allowed to sit for a few hours in the fridge. The longer it sits the stronger the flavor!
