Hey-yo! Peaches and cream?! Yum. Except, we don’t do dairy around here…. Did I fool you? Maybe a little..?
[Truth] Sometimes we like to be lazy… Or, we’re just having too much fun outside (hey, it’s summer) and going inside to cook sounds awful. And boring. (snooze….) So, every now and then we like to do smoothies for dinner! Most of the time we’re just piling in whatever sounds good, still keeping ‘healthy’ in mind – but when we find something killer I write it down to share. THIS IS ONE OF THOSE.
I called it peaches and cream, because it seriously tastes just like that to me. Mmm…. I still remember what that tastes like, even though I haven’t had it in years….
So – on this particular night we had an abundance of ripe nectarines (bulk buy at Costco…) so we needed to use them up quickly! We also ALWAYS have dates around. Dates are great for snacks on-the-go for kids (remove the pit and slice into smaller pieces of course…) and also for sweetening smoothies. The latter is my fav!
My personal preference when it comes to smoothies is to use half frozen fruit and half fresh fruit, so when it blends it has a nice cold, creamy consistency. I almost always use a banana – they make any smoothie wonderful 🙂
So, without further ado, here is the creamy/sweet/amazing concoction we whipped up! Feel free to make substitutions to create YOUR dreamy creamy smoothie – if you find something better leave a comment below and tell me about it!
